Hummus.

Megan, you are the inspiration for this recipe darling.

This week I brought a ziploc container full of hummus to my wonderful friend Megan’s apartment. After spending several weeks in Greece with her, hummus is a great centerpiece for any of our catch up conversations, even those that find us sitting on the floor sharing memories and stories! There is nothing like this dip and I was basically raised on it. Little do you all know how easy it is for you to make your own hummus! This recipe is going to save you pocketfuls of money and it is the perfect dip to keep in the fridge for a week full of carrot dipping and pita chip crunching!

The ingredients are super cheap too!

For each batch you want to make you will need –

2 lemons

2 small cans of chick peas (or garbanzo beans)

4 tablespoons of tahini (or sesame paste)

Extra Virigin Olive Oil

Tahini  can be found in the specialty section of most grocery stores. I know Whole Foods carries it, and it is really multipurpose and a great investment! Not only can you use it in hummus, but it makes a great thickener for other dips and salad dressings.

You will also need to have a food processor… This is my DREAM food processor from Viking, but I am still very lucky to have my Cuisinart.

Once you have everything out and ready –

Open both cans of chickpeas and dump them out into medium pot. Heat them up until the chickpeas and liquid are boiling. Once you let it boil for a minute or two turn off the pot and remove it from the heat.

Use a strainer or simply just take out all of the chick peas and place them separately from the liquid into the food processor. With the chickpeas place the 4 tablespoons of tahini and the juice from one of the lemons. Process them until they are well blended.

The next step is to slowing pour in the liquid from the chick peas. Keep the food processor on and keep a steady stream of the liquid into the mixture until it all goes on. After that liquid goes in slowly pour in 2 to 3 tablespoons of olive oil.

At this point it is up to your tastebuds! Adding more lemon juice is up to you, as is the amount of salt you choose to sprinkle on top! Sometimes I like to add 1 to 2 more tablespoons of tahini if it doesn’t taste flavorful enough!

If I am serving it to a group I might garnish it with a parsley sprig, some of the cooked chickpeas if I set them aside, or even some toasted pine nuts! It is also really tasty if you put a little bit of extra virgin olive oil on top so it soaks into the pita bread or whatever you choose to dip into the hummus!
